Protein-Packed Mac N Cheese

Everyone loves Mac N Cheese- even super picky kids. There's just something about it that makes you feel SATISFIED (the carbs and cheese, duh). It's not know for being the healthiest food and let's face it- we don't really want to ruin it by making it TOO healthy. So we found a way to compromise by adding a healthy servings of protein into the mix. Adding unflavored whey protein not only ups for nutrition content, it adds a rich creaminess to the classic stick-to-your-ribs dish. Here's how to make it!


To Make 8 Servings of Baked Mac N Cheese You Will Need:

1/2 cup BN Labs Unflavored Whey Protein
2 cups whole or 2% milk
4 tbsp unsalted butter
3 cups sharp cheddar cheese, shredded
3/4 tsp salt
3/4 tsp pepper 
1/8 tsp paprika
1 tbsp chopped parsley for garnish (optional)
16 oz protein pasta, preferably elbow macaroni

Instructions


Preheat oven to 350 degrees. Cook pasta in salted water to al dente texture, drain, and set aside in a large baking dish that's been coated with 1 tbsp butter to prevent sticking. Combine 2 cups cold milk with whey protein in a blender, and blend until smooth. Melt 3 tbsp butter in a large saucepan over medium-low heat, and whisk in blended whey protein and milk. Heat over medium low heat until mixture comes to temperature, about 5 minutes while continually stirring. Gradually add in 2 cups of cheddar cheese, stirring to combine, then add in salt, pepper, and paprika.  When cheese is melted and mixture begins to thicken, pour over noodles and mix well. Top with remaining 1 cup of cheddar, and cover with foil. Bake for 30 minutes, remove foil, and bake for an additional 10-15 minutes to get a crispy top layer if desired. Garnish with parsley (optional).
